This kettle is ideal for restaurants, hotels, schools, and other commercial establishments because of its ability to quickly and carefully heat up large volumes of liquid. Steam kettles are the perfect appliance for cooking soup, delicate sauces, gravies, rice, meat, and much more.
The Vulcan K12ETT has a True Working Capacity of 12 gallons, allowing you to cook and serve a total of 192 (8 oz) bowls of your signature soup or special. With embossed gallon and litre markings that won’t fade or wear off, you’ll know exactly how much product you’re making and how much you have left, significantly improving your business’ accuracy.
Unlike with using a stock pot and range where heat is only emitted from the bottom, steam jacketed kettles feature a cooking surface that covers two-thirds of the pot allowing much more of the product to come into contact with the heat source. This provides you with much faster cooking times while using a lot less energy. By using a kettle, you’re also preventing hot spots and scorched soups resulting from range cooking that must be done at much higher temperatures.
The Vulcan 12-gallon steam kettle features an ellipsoidal-shaped bottom that offers better heat transfer. The liner is formed from a fully welded type 316 stainless steel that provides superior protection against corrosion over time. The exterior is made from type 304 stainless steel that will easily stand up in high traffic kitchens.
The pot incorporates a butterfly-shaped pouring lip for better accuracy when serving thick or chunky soups and stews. A stainless steel tilting lever, which can be mounted on either the left or right-side, lets you tilt the kettle forward 100° to completely empty its contents. The tilting mechanism can also lock in its upright and 100° positions.
The Vulcan K12ETT has stainless steel, watertight controls that feature a power switch, solid state temperature control, indicator light, vacuum/pressure gauge, pressure relief valve, low water light and low water shut-off.
